Crossing bridge rice noodles come from Yunnan in south-west China. The story goes that a scholar studied on an island, and his wife carried his lunch across a bridge each day. To keep it warm, she sealed a hot broth under a layer of oil and kept the noodles and toppings separate — cooking everything together only when she arrived.
